
Apple Pie

Ingredients:
Pastry:
310gm plain flour
2 level teaspoon baking powder
100gm sugar
1 teaspoon Vanilla
A pinch of salt
1/2 egg yolk
1 egg white
1 tablespoon milk
150gm softened butter
Apple Filling:
1 &1/2 Apples
1 tablespoon water
2-3 tablespoon sugar
1/2 teaspoon ground cinnamon
50gm sultans (washed and dried)
A few drops of lemon essence flavor
For brushing:
1/2 egg yolk and 1 teaspoon milk
How to prepare:
Mix and sieve together the flour and Baking powder.
Make a well in the center and pour the sugar, vanilla, salt, 1/2 egg yolk, egg white and the milk.
Mix with hands all together to form a thick paste.
Add the softened butter, mix all together with hands to form a smooth, firm pastry.
Grease a round cake tin of 26cm diameter with a removable rim.
Roll out about half the pastry to fit the base and the edges of the tin.
Peel core and slice the apples.
Stew the apples over a low heat, together with the water, cinnamon and sultanas.
Stir frequently until the apples are half cooked.
Add sugar and flavoring.
Fill the apples into the cake tin over the pastry.
Lay the other half of the pastry on top of the apples.
Beat the egg yolk with the milk and brush over the cake.
Bake at moderately hot oven for 40-45 minutes (covered with foil paper for the first 30 minutes).
Serve hot with whipped cream or vanilla ice-cream.
